Lindsay Bailey, our Master Oyster Opener, has over 30 years' experience in the industry. For 10 years Lindsay managed Phillips Oysters Georges River Pty Ltd, which, at the time, was Australia's largest family firm farming oysters along the NSW coastal districts. The firm farmed, processed and distributed up to two million dozen oysters annually, Australia wide and to many overseas outlets.

Lindsay then went on to his own restaurant in Dubbo, western NSW, specialising in fresh seafood and, of course, introducing country dwellers to the delights of the freshly opened oyster.

As you enter our restaurant, you are greeted by Lindsay, who encourages you to sample one of these delicacies.

Owner Greg insists that there is an enormous difference in the taste of an oyster opened in front of your eyes and one that was opened hours earlier. Hundreds of happy Vulcanoes oyster eaters agree with Greg.

The live oysters are freighted from Port Stephens, NSW direct to Perth by Rand Refrigeration Transport, and then opened, as ordered, in full view of our customers at a specially designed bar which was installed at Vulcanoes for this purpose.
